  • Food additives (artificial preservatives, flavour enhancers, colours etc.)
  • Latex foods: cross-reactions with banana, avocado, chestnut and others
  • Chia and other seeds

Why "Modern Foods" Cause Problems

When thinking about food intolerance - the major thing to remember is that "modern foods" are the most likely culprits. "Modern foods" means foods that were not known to our prehistoric (caveman) ancestors.

Humans have survived well on this planet for more than two and a half million years. We are all descended from these early humans - and carry virtually the same genetic material, which is more than 2,500,000 years old. That's two and a half thousand millennia!

Today - we have genes and digestive systems that are almost identical to those of early humans. So - what foods did prehistoric humans eat?

The only foods available were those they could hunt for and gather (hence the term hunter-gatherer):

  • Meat and fish
  • Shellfish and crustacea
  • Vegetables (especially above-ground leafy varieties)
  • Fruits
  • A few nuts and seeds
  • Occasional birds' eggs
  • Water
 (Note what's missing: grass grains (like wheat), dairy and sugar.)

So-called "Modern foods" did not appear until humans learned a little about farming. This began only around 10,000 years ago (very recently!) - when our Early Neolithic ancestors started:

  • corralling and breeding animals (for meat - and later milk)
  • planting seeds - and learning about crops
  • processing grass grains - winnowing to remove husks and grinding for flour

TODAY when we eat modern foods like wheat, barley, rye, oats, spelt - and dairy foods and abundant sugars -

  • We are putting them into digestive systems that are more than two million years old. No wonder we get sick!
  • It's a bit like trying to run an old vintage car on aviation fuel. . . lots of coughing, spluttering, stalling and engine clogging!
An Interesting Point About Disease
 Fossils tell us that the tall, slender Paleolithic or pre-agricultural humans (before farming) showed no signs of modern diseases like diabetes, heart disease, arthritis or obesity
 But later fossils from the later Neolithic period (the earliest farmers) clearly showed signs of disease appearing: osteoporosis, tooth decay - and they were shorter in stature than their tall forebears
 Evidently the appearance of these modern foods set off a string of 'incurable' diseases with which we are still struggling today (References below i,ii)

In general most human digestive systems are not suited for digestion of modern foods.

How do we know this? Because more than 75% of all people have some type of food intoleranceiii :

Up to 90% of Asian American adults and 70% of African American adults have dairy intolerance - never mind additional intolerances like gluten and fructose.

Depending on our cultural parentage - our stomach, our intestine - our whole digestive system may be unsuitable for digesting 'modern foods'.

How Does Food Intolerance Make Us Sick?

There are two main mechanisms:

  1. We may not be able to produce the digestive enzymes needed to process modern foods . . . so food is incorrectly broken down. This yields damaging substances like gliadins, glutenins and casein peptides which damage the lining of your intestine
  2. Or there may be missing cell structures (as in fructose sensitivity)

In many cases, the damaged tissue in our gut (from e.g. grains, dairy foods, nightshades) leads to Leaky Gut.

Leaky Gut - A Damaged Intestine Which Can Be Healed

Leaky Gut is a well known medical condition - where the lining of the small intestine is perforated (gets holes in it). A damaged intestine is serious and can make you quite sick.

First - a quick lesson on how the intestine works.

The function of a healthy intestine is twofold:

  • IT ABSORBS: We must absorb nutrients from food to stay healthy
  • IT FILTERS: We must filter out unwanted products and prevent them from entering the bloodstream - e.g. 'foreign' substances - like unfriendly proteins, bacteria and viruses that make us sick

However - a Leaky Gut leaves you very vulnerable to all kinds of chronic symptoms and illnesses. When you eat foods you cannot fully process (modern foods) and your gut gets damaged - there are two adverse consequences.

  1. You can't absorb nutrients properly. Result: Malabsorption illnesses
  2. You can't filter out unfriendly substances. Results: Infection and/or immune response illnesses - inflammation or auto-immune disease.

Leaky Gut is known to lead to:

  • Malabsorption conditions like:
    • Osteoporosis, anaemia, vitamin and mineral deficiencies
  • Inflammatory conditions like:
    • Irritable Bowel, colitis, thyroiditis, rashes, sinusitis, joint pain
  • Infectious conditions like:
    • Colds and 'flu, gastroenteritis, Candida, tinea and other infections
