Snoring is strongly linked to inflammation. The resulting swelling in the throat and nasal passages ... impedes breathing whilst awake - and asleep. Add this to very relaxed throat muscles in sleep - and the rhythmic open/close pattern of the throat creates the vibratory noise known as snoring.
But snoring is just one end of a spectrum of disorders. Extreme blockage of airways is the cause of sleep apnoea - which leads to the serious hypoxia - not enough oxygen to the brain.
In other words - the inflammation brought about by undetected food intolerance causes snoring, sleep apnoea and can lead to hypoxia. But research now shows we can reduce inflammation and relieve sleep apnoea with simple dietary changes.

Sleep Apnoea: A blocked nose and throat impedes breathing
The advanced stage of loud snoring is sleep apnea – where the breathing actually gets closed off for 4 - 15 breaths. (That's a long time to be without air!).
When we are asleep most of us breathe through our noses. But when the nose is chronically blocked (say you find yourself "mouth-breathing" during daytime hours) - you may have sleep apnoea... even if you are not aware of it.
Here's how it goes: Trying to breathe against a blocked nose with the mouth closed - lets very little air in. But the chest still heaves up and down against blocked airways. Then after six or more 'no air' cycles of chest heaving - the body's emergency breathing mechanism kicks in - your 'fight or flight' response.
The mouth opens - gasping to avoid suffocation - and the person is momentarily awakened. This is because the brain senses there is not enough oxygen being supplied - and it is at risk - so it wakes you up. This is the same reflex action that makes us fight against smothering - or drowning.

Snoring can damage hearing
